Moutai House Singapore is in The Fullerton Waterboat House at 3 Fullerton Road, by the mouth of the Singapore River, with a Chinese restaurant run by Imperial Treasure on level 3 and a rooftop bar called SOHAUS on level 4. Imperial Treasure Moutai House opens daily for lunch (11am to 3pm) and dinner (6pm to 10pm), and SOHAUS runs Tuesday to Saturday, 5pm to midnight.
Moutai is the Chinese baijiu brand, Kweichow Moutai. Its Singapore house sits in the 1941 Art Deco Water House building beside The Fullerton Hotel, which Moutai House's own history page says Swan and Maclaren designed. The brand's story is that Moutai first landed in Singapore on this stretch of river in 1954, facing this same building.
Inside there are three parts: the Moutai space itself with a bar, lounge and a shop for bottles, the Imperial Treasure Moutai House restaurant, and the SOHAUS rooftop. You do not need to be a baijiu drinker to go. Most people will come for the dinner or the view. If the view is the point, our rooftop bars list has the competition.
Imperial Treasure runs the restaurant at #03-01. It says the menu centres on Huaiyang cuisine with Guizhou flavours, built to show Moutai as something you drink with food, not only for toasting. Signature dishes it lists include sautéed roe crab with egg omelette, braised bird's nest with minced chicken broth and Yangzhou fried rice with sea cucumber, shrimp and conpoy.
It seats 45 with one private room, and is open Monday to Sunday, 11am to 3pm and 6pm to 10pm. Reservations go through Imperial Treasure, phone +65 8666 9778. Imperial Treasure says its menu prices are indicative, so check them when you book. The group is not halal-certified, and the menu has pork.
SOHAUS is on the rooftop, level 4, and calls itself a rooftop social house. Hours are Tuesday to Saturday, 5pm to midnight, closed Sunday and Monday. The cocktails take cues from what is trending around Asia, and the deck looks straight at Marina Bay Sands.

Go around sunset. The bay lights come on while you are on your first drink. Book on the SOHAUS site, or call +65 8919 4814. You must be 18 or over to drink.
· Raffles Place MRT is the closest, about a 10-minute walk past The Fullerton Hotel.
· SOHAUS is closed Sunday and Monday. Plan a weekday rooftop drink for Tuesday to Thursday.
· Book the restaurant early if you want the one private room.
