1887 by André is chef André Chiang's restaurant inside Raffles Hotel Singapore, and it debuted with two Michelin stars plus the Opening of the Year award in the Michelin Guide Singapore 2026. Expect a minimum spend of $200 nett per person, charged when you book, with lunch and dinner Tuesday to Saturday.
André Chiang closed his famous Restaurant André in Singapore years ago, so this is his homecoming. He is Chef Patron, and the day-to-day kitchen is run by Chef de Cuisine Ben Wang and Sous Chef Roy Kuo, both long-time members of his team from RAW in Taipei.
The restaurant sits in the hotel's old formal dining room, redone by Bill Bensley. Raffles calls the food heritage gastronomy through a French lens: French technique, Singapore flavours, Raffles history. Michelin singled out the papillote de bouillabaisse.

How much 1887 by André costs and how to book
Raffles lists a minimum spend of $200 nett per person for lunch and dinner, charged to your card at booking. Cancel or change within 72 hours and you pay a $200 per person fee. No-shows pay the same.

Guests must be 12 and above. Dress code is smart casual, and men are asked to wear tailored trousers and closed-toe shoes.

For one night only, on 20 November 2026, André Chiang hosts chef Ricardo Chaneton of MONO in Hong Kong for 1887's first collaboration dinner. It is an eight-course menu at $488++ per person, mixing French technique with Latin American flavours.
