The two mookata sauces that matter are the green chilli (sour, garlicky, for seafood) and the red chilli (sweet and spicy, for grilled meat). At Family Mookata both are free flow on the $19.90 nett buffet, along with a melted cheese dip that sits right on the pan and a sauce bar to mix your own.

Green chilli vs red chilli

Green chilli is the Thai seafood sauce: lime, garlic, green chilli. Sharp and sour. It belongs on prawns, squid, scallops and the baby lobster.

Red chilli is sweeter and stickier. It goes on grilled pork belly, the marinated chicken and anything charred. Family Mookata lists both as its signature green and red chilli sauces.

Rookie move: one saucer for everything. Get two saucers per person, one of each, and you will taste the difference in the first bite. New to the whole thing? Read what mookata is and how to eat it first.

The cheese dip goes on the pan

Family Mookata's free-flow melted cheese dip is cooked straight on the pan, not served in a saucer. Put the tray at the edge of the grill and let it bubble.

Dip fishballs, cheese tofu, hotdogs and corn. Not seafood with chilli on it, that is a crime. Keep refilling; it is part of the buffet.

Mix your own at the sauce bar

The sauce bar lists tom yum paste, minced garlic, minced red chilli, Thai sweet chilli, sesame oil, light soy, fish sauce and lime juice.

Our two mixes. For the soup: one spoon of tom yum paste into the broth moat around the grill, then let the meat juices do the rest. For meat: light soy, minced garlic, minced chilli and a squeeze of lime. Basic, salty, perfect on pork belly.

There are also pork lard cubes for greasing the dome. Put one on top before the first round of meat so nothing sticks.
