What is pansuh?

Pansuh is how the Iban and other Dayak communities in Sarawak have cooked for a long time: meat, herbs and a bit of water packed into a green bamboo tube, then set over the fire. The bamboo steams everything from the inside, so the chicken comes out soft and the broth tastes clean and a little grassy.

KANTIN's menu describes its version as chicken and wild vegetables cooked in bamboo over a fire. If pansuh is new to you, our 8 Sarawak dishes to know in Singapore is a good five-minute primer before you order.

What the Headhunter Pansuh Set costs

The Headhunter Pansuh Set is $32 on KANTIN's menu. The photo on our post shows the spread it sits in: the bamboo tube split open on banana leaf, a mound of purple rice, crackers and small sides of greens and bamboo shoots.

Our honest take: you can find Sarawak laksa in a few places now, pansuh is much harder to come by. So if you are only ordering one main, make it this. Have the $24 Sarawak laksa as the second dish if there are two of you.

Coming with three to five people? The $168 Headhunter Feast Platter already includes pansuh soup and purple rice, and we did the maths on it in is the Headhunter platter worth it.
