What the two live stations were

The buffet was built around two of them. Australian Wagyu char-grilled out on the alfresco area, and pan-seared foie gras done to order at a second station inside. That is the reason for the price, and it is also the reason to plan your plate: made-to-order foie gras means a queue at the station, and a two-hour seating disappears quickly if you spend forty minutes of it standing in one. The seating structure is the thing to plan around

Two hours, hard stop, and the second seating starts fifteen minutes after the first ends. Take the 6pm if you want the grill station before it gets hammered. Take the 8.15pm if you would rather eat late and have the foie gras station to yourself for the last half hour, which is genuinely when it is quietest.
