Ministry of Spud has put a Chilli Con Nachos on its menu, and it is at the pasar malam beside Sembawang MRT until 30 August 2026, 12pm to 10pm daily. It is the same chilli con carne they load into their baked potatoes, poured over tortilla chips instead.
Tortilla chips at the bottom, then chilli con carne with kidney beans and chickpeas in it, then diced tomato and red onion, then pickled jalapenos across the top. It comes in the same rectangular tub as the spuds, which means it is a two-hands, sit-down-somewhere portion rather than a walk-and-eat one. The chips at the edges stay crunchy, the ones in the middle go soft under the chilli within about five minutes, which is either the best or worst part depending on how you feel about soggy nachos. We are on the pro-soggy side.
The pasar malam runs along Sembawang Way, on the open ground beside Sembawang MRT (NS11) with Sun Plaza across the road, from 12pm to 10pm daily. The stall listed its run there until 30 August 2026. Pasar malam stints move, so check @ministryofspud before you make the trip out, especially in the last few days. If you want a sense of how these night markets work generally, our Pasir Ris pasar malam write-up covers the layout and the timing.
Ministry of Spud built its following on loaded baked potatoes at pasar malams and bazaars, and it has done the rounds at Woodlands, Punggol and Jurong West. That means most people in the queue already know the menu and order fast, so the line moves better than it looks. The nachos are the newest thing on it, so if the person in front of you is deliberating, that is what they are deliberating about.
