Uncle Leong Signatures does curry fish head two ways. At Joo Koon, the Curry Fish Head Bundle is $65 with three side dishes, and fish head steamboat runs $47 to $97 by fish and group size. At MacPherson, Curry Fish Head (red snapper) is $20 small or $31 large on the menu.
This is the best-value page on the Joo Koon menu. $65 gets you a Curry Fish Head plus one pick from each of three columns: Fermented Beancurd Fried Pork or Prawn Paste Chicken, Signature Homemade Beancurd or Braised Beancurd, and Stir Fried French Beans with Shrimps or Chinese Spinach with Eggs. Complimentary rice is optional, limited to three.

Fish head steamboat (Joo Koon)
Prefer it in a clear soup? Red Snapper fish head steamboat is $47 for 3 to 4 pax, $67 for 5 to 6, $87 for 7 to 8. Red Garoupa is $57, $77 and $97. Add-ons: fish maw $5; beancurd skin, golden mushroom, beancurd, yam, seaweed and tung-o $3 each; Chinese cabbage $5. A second pot gets $10 off.
Our call: garoupa if it is a celebration, snapper if it is a Tuesday. The prices on our copy of the menu were stickered over, so confirm when you order.
