Chicken cutlet curry risotto is one of the signature dishes at Simon Says Cafe, 60 Boat Quay. It takes the Hainanese curry rice formula, breaded chicken cutlet under curry, and puts it on risotto instead of plain rice.
Hainanese curry rice is old Singapore: a breaded pork or chicken cutlet, braised cabbage, a fried egg, all drowned in a gravy of curry. It is lunch at a kopitiam, not a cafe dish.
Simon Says Cafe keeps the cutlet and the curry and swaps the rice for risotto. The photo the cafe uploaded shows a golden cutlet in yellow curry with a sunny-side-up egg and cabbage on top, which is the classic layout.
Risotto holds curry better than steamed rice. Instead of the gravy running to the edge, every spoonful is coated. The cutlet stays the crunchy part.
Break the yolk into the curry. That is non-negotiable.
If curry is not your thing, the cafe's Hainanese pork chop is the same tradition with a tomato-based sauce. We wrote it up in our Hainanese pork chop piece.
